CO Summer Street Eats: Sharing community-approved food truck recommendations

Colorado’s warm weather and the end of July mean summer is well underway, and many local food trucks are roving the state serving outdoor eats.
This food truck-focused entry is made up of internet mentions and community-shared recommendations based in the state’s most populated cities. According to World Population Review, Colorado’s five most populated cities are Denver, Colorado Springs, Aurora, Fort Collins and Lakewood.
Due to the number of responses received and items found, a randomizer was used to determine this noncomprehensive list, which is organized alphabetically.
Adobo Food Truck serves “Latin-Asian” cuisine, with food items ranging from a full section of tacos to lumpia and pork belly dishes. They also offer vegetarian and vegan options.
According to Ba-Nom-A-Nom’s website, they sell a maximum of four flavors of ice cream via food truck, all made only of banana or watermelon. Their website said that aside from a granola topping, everything they sell is gluten-free on the truck. They also sell 24 rotating flavors in their brick-and-mortar location.
Bandwagon Sandwich Co. is a hot deli on wheels with a music appreciation theme. Their menu features items that suit a variety of dietary restrictions, offering everything from “Fleetwood Mac,” a side of green chili queso macaroni and cheese, to a vegan “Black Bean Sabbath” sandwich.
Borderless Food Truck serves “global flavors” until late at night, including gluten-free and vegetarian fare. Their menu on Truckster features gyros, tacos, sandwiches and more; details on the ingredients in each dish can also be found there.
The Burger Bus specializes in smashburgers; their menu features a vegetarian and vegan option, and customers have the ability to order any burger open-faced. They also offer a small selection of sides and drinks.
According to their Facebook page, Colorado Coney Company is family-owned and specializes in hot dogs and hamburgers. They note that all their food is made from scratch, including toppings like sauerkraut and chili.
Corndoggies sells “artisan corndogs,” and they offer gluten-free, dairy-free and vegan batter options. Their corndogs are made with a variety of sausages, meats and flavors. They also have an event-dependent rotating list of sides.
The Cupcake Doctor is military-owned and serves 8-15 cupcake flavors at a time, with homemade buttercream frosting. They also make custom cakes, cookies and cupcakes in their shop.
Down South Louisiana Cooking serves Cajun dishes; one of their recent menus on Facebook lists items like sides of fried okra, fried catfish, banana pudding and jambalaya.
Double Wide Burgers’ Facebook page shares that they serve “Colorado-raised dry-aged beef and other delicious eats.”
Fat Tomato Food Truck serves tacos, sandwiches, quesadillas, loaded fries and more throughout Northern Colorado.
According to their Facebook page, Fork Yeah has a rotating menu of “classics.” They primarily serve a range of hot dogs and hamburger options that come with French fries.
Good Grub by Taco serves breakfast and lunch items; their menu features sugared waffles, breakfast quesadillas, wraps, sandwiches and more. Those interested can view their schedule and locations on their website.
According to their Facebook page, Isan Thai Food Truck specializes in Northern Thai dishes. Their menu features a few gluten-free items that customers can request; it also includes delicacies like wontons, fried dumplings, Pad Thai, pineapple curry and more.
Jalis-Co sells Barbacoa-prepared meats, meaning they use a Mexican slow-cooking method. Their menu features tacos, consomes, quesabirria plates and several other entrees centered around barbacoa.
According to their website, Jordy’s Barbeque is pit master and family-owned, and recognized for an experimentation-driven menu of smoked meats. In addition to a range of meat options, the food truck offers sides and desserts, including banana pudding, two types of macaroni and cheese and elote. Jackfruit “pulled pork” sandwiches are also available to order.
Jose’s Street Tacos is a Mexican food truck that serves tacos in six styles, tortas, burritos and more. Their full menu is available to view at the top of their Instagram feed.
La Bicicleta sells taco baskets with several meat filling options, like al pastor and asada. According to their Facebook page, they also offer cold drinks and specialize in pozole.
Little Red’s Kitchen specializes in hot dogs and corn dogs, and their Truckster profile notes that they often create themed menus for events.
Little Sizzle’s Facebook page features a menu full of Native American foods, including items like frybread, Indian tacos and more.
Mac Envy serves “freshly made Mac ‘N Cheese from scratch.” According to their website, they offer topping options like lobster and barbequed pork. They also sell canned and bottled drinks and homemade cookie dough bites.
According to their website, The Magic Food Bus is run by trained chefs and has been serving street food since 2020. Their Instagram page features hamburgers, wraps, poke bowls and other international cuisine items. They also have a stall in Relish Food Hall.
Misfits Punk Rock Pizza specializes in crisp, wood-fired pies that channel the rebellion of punk rock into creative flavors. Menu items include the “Unholy Cannoli” and the “Ziggy Stardust,” a pizza with white cheeses, mushrooms and a mix of cooked green vegetable toppings.
Mukja is a women and Asian-owned, family-operated, Asian fusion food truck that serves items like wonton nachos, Korean cheese dogs and more. Their Instagram bio notes that their schedule gets posted to their feed weekly.
Muy Loco Tacos is fast food-focused and specializes in “classic Mexican food” items. Their menu features totchos, potato flautas and several taco options. They also offer vegetarian and kids’ options.
No Ke Aloha’s website describes them as family-owned and operated. They hope to spread awareness of Polynesian culture and “the concept of Aloha” through foods like Spam Musubi, stir fry and Ahi Tuna.
According to their Facebook page, Q’Rico Mexican Cravings sells menu items like carne asada fries, nachos made from Doritos, chamoyadas, tacos, frappes and more.
Established in memory of a Rolling Stones-loving family member, The Rolling Stoves is a husband-and-wife-run food truck specializing in “Bombs,” which consist of a thinner hand pie-like shell around a burger or other filling. Their menu features a range of burger options, breakfast fillings and dessert bombs. They also serve vegetarian options and kids' meals.
Taqueria Nueva Union sells a “wide array of fresh food,” spanning from handheld dishes like tortas and tacos to smothered burritos.
Xtreme Coffee Roasters makes and sells specialty drinks, coffees and teas with organic ingredients. Their website notes they only use real ingredients and make their own syrups. Their menu has special summer sections, small food items and bottled beverages. Bags of their coffee are also available for purchase through their website.
